I don’t know about you, but I’m really missing the Wisconsin summer farmer’s market bounty right now. Lucky for us, me can find most everything we need for a healthy diet in the grocery store. So, shop the perimeter, imagine the sun on your neck, and be glad that most everything is still in season SOMEWHERE. Definitely, take advantage of the the shining stars of the winter produce section, sensational citrus! Grapefruit, in particular, are at their sweetest, juiciest, best in January & February. These cancer-fighting, fiber-rich, vitamin-packed little numbers actually contain an acid that slows digestion in order to keep you feeling fuller longer. They’re the cheapest right now, too! Don’t be discouraged if you still find them priced at over $1 each. They’re usually huge and you still benefit from eating 1/2 today and covering the other in the fridge to enjoy tomorrow. Or toss sections into a salad – a whole one would be too much anyway.

 Here’s another deliciously creative idea:

Chicken and Grapefruit

4 boneless chicken breasts

1/2 tsp dried thyme

1/2 tsp salt

1/4 tsp black pepper

2 T bsp olive oil

1/4 c dry white wine

1/4 c chicken broth

3 T bsp grapefruit juice

2 tsp honey

3 c trimmed watercress

2 grapefruit, cut into segments Season chicken with thyme and half of the salt and pepper.

Heat oil in frying pan over medium-high heat. Brown chicken, 6 minutes a side. Add next 4 ingredients. Simmer until reduced to 1/3 cup.

Season with remaining salt and pepper. Put watercress and grapefruit on plates. Top with chicken and sauce. 4 servings Read more:
